MAITRE D’HOTEL

Job Description:

- Overall responsibility for all food and beverage services including dining room, bars, alternative food outlets and buffet operations.

- Creates, schedules and oversees procedures for Head Waiters and Food & Beverage Supervisors.

- Assigns and rotates waiter stations and Lido duties.

- Arranges table assignments and handles dining adjustments requested by Guests.

- Works closely with the Executive Chef to create and maintain good relations between the Galley and the Dining Room Staff and to provide quick, efficient service, in order to avoid food waste and prevent negative comments from the guests.

- Provides the Executive Chef and the Staff/1st Purser Food & Beverage with immediate feedback on Guests' appreciation for service and for food.

- Oversees daily work duties and schedules, monitors and minimizes overtime while evaluating work performance for all Food & Beverage service staff, in accordance with Princess policies.

- Monitors special requests, diets and events such as birthdays and anniversaries.

- Ensures that training for Food & Beverage service staff is implemented and maintained.

- Responsible for meeting/exceeding the budget for the revenue/sales of wine/beverages in all areas supervised.

- Ensures that payments of tips/wine sales are properly accounted and signed for.

- Ensures that Food & Beverage staffs comply with all Princess policies and procedures.

- Responsible for public relations with Guests.

- Performs culinary demonstrations, wine tasting, champagne waterfall and/or any other function as instructed by the Staff/1st Purser Food & Beverage.

- Oversees that the highest level of sanitation is maintained throughout the areas supervised.

- Ensures that all objectives in the Food & Beverage area meet target.

Job Requirements:

- Possess a diploma from a recognized European or US hotel school or university or equivalent, plus a minimum of three years experience as a Maitre d' Hotel or equal offshore with international clientele, or minimum of service of two years on board a 4/5-star ship.

- Ability to understand, analyze and interpret financial results.

- Completion of course in basic Food & Beverage.

- Completion of Advanced/Intermediate Food & Hygiene.

- Strong leadership (leading by example) and motivational skills.

- Needs to be very service and quality oriented - "attention to details".

- Strong ability for building interpersonal relationships with the Guests (socializing skills)

- Ability to plan, execute, follow up and be positive to change in a very flexible working environment.

- Friendly, outgoing, well presented personality.

- Ability to train and motivate with good public speaking skills.

- Ability to innovate and foster creativity.

- PC knowledge of: Word and Excel.

- Fluent in interpreting and implementing companies and work rules.

- Effective planner and organizer

- Strong team building abilities.

- Strong command of the English language combined with good verbal and written skills.

Experience in quality establishments and good knowledge of English are essential.
